Prosecco Julep


4 cups
Prosecco Julep
5 fresh mint sprigs, plus extra for garnishfresh mint sprigs5
1 cup Mint Simple Syrup, recipe followsmint simple syrup1
1 cup single malt Scotch whiskey, such as Glenfiddichsingle malt Scotch whiskey1
2 cups Prosecco, chilledProsecco2
Mint Simple Syrup
1 cup sugarsugar1
½ cup waterwater½
1 packed cup packed fresh mint leavesfresh mint leaves1


Prosecco Julep
In an ice-filled pitcher, mix together the simple syrup, whiskey and 5 mint sprigs. Slowly pour in the Prosecco and mix. Pour into glasses and garnish with mint sprigs
Mint Simple Syrup
In a small saucepan, combine the sugar, water, and mint leaves over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.
