Chicken Spezzatino

Italian stews are called “Spezzatini” (plural) because the meat is cut into small pieces, the word “spezza” means to cut. All you have to do is throw all the ingredients into a pot and it makes a great weeknight dinner. It’s so easy and quick and it doesn’t need much attention but it’s still a rich, delicious and satisfying one-pot meal. Ladle into serving bowls and serve with crusty bread.
