Skewered Greek Salad

24 grape or small cherry tomatoescherry tomato(es)24
3 ounces feta cheese, cut into 12 (½-inch) cubesfeta cheese3
12 pitted Kalamata oliveskalamata olives12
½ small red or sweet onion, cut into 12 (½-inch) piecesred onion½
12 (6-inch) bamboo or wood skewerswooden or bamboo skewers12
2 teaspoons lemon juicelemon juice2
2 teaspoons red wine vinegarred wine vinegar2
4 teaspoons chopped fresh oreganofresh oregano4
2 tablespoons extra-virgin olive oilextra-virgin olive oil2
Salt and freshly ground black peppersalt and freshly ground black pepper1


Thread the skewers starting with a tomato, then a piece of feta cheese, an olive, a piece of onion and finish with another tomato. Repeat with the remaining ingredients.
In a small bowl, mix together the lemon juice, red wine vinegar and oregano. Whisk in the olive oil until the mixture thickens. Season with salt and pepper, to taste.
