Sparkling Apricot Mint Sours


4 to 6 servings
Sour Mix
1 cup fresh lemon juicelemon juice1
¼ cup fresh lime juicelime juice¼
¾ cup simple syrupsimple syrup¾
12 fresh mint leaves, plus sprigs for garnishfresh mint leaves12
1 tablespoon superfine sugarsuperfine baker's sugar1
1 cup apricot nectarapricot nectar1
12 ounces gingin12
Crushed ice, for servingcrushed ice1


Sour Mix
Mix together the lemon juice, lime juice and simple syrup. Cover and refrigerate until cold.

Muddle the mint in a pitcher with the sugar. Pour in the apricot nectar, gin and sour mix and mix until combined. Serve in rocks glasses over crushed ice. Top with splashes of prosecco and garnish with mint sprigs.
