Arugula Salad with Summer Fruit

3 ounce pancetta, diced pancetta3
2 peaches, halved, stones removed, sliced into wedgespeach(es)2
1 cup cherries, pitted and halvedcherries1
8 cups (7 ounces) baby arugulababy arugula8
½ cup coarsely chopped, skinned and toasted hazelnutshazelnuts, skinned and toasted½


Arugula Salad with Summer Fruit
In a sauté pan, heat the oil over medium heat. Add the diced pancetta and cook, stirring often, until browned and crispy. Drain on a paper towel. Gently toss the fruit, arugula and drain crispy pancetta together. Top with the chopped hazelnuts.
